Creamy coconut millet porridge with rose scented strawberries, coconut kefir yoghurt & pistachio crumbs. Yep, I am obsessed with this combo. It’s lovely & delicate & makes me think of holidays in Turkey (which I’ve never been too but this tastes like Turkish delight 😜)

Experimenting with Teff. The world’s smallest grain packs a nutritional punch. There’s 7g of protein in 1/4 c & it’s also rich in fibre, vit c, iron, calcium & phosphorous. It’s #glutenfree & high in resistant starch which means it helps to manage blood sugar levels. I cooked it in water, and added a little stevia, coconut oil & a pinch of Himalayan pink salt. Served it with cinnamon stewed apples & pears.  A really grounding & nourishing start to the day which is what I was craving. Happy weekend everyone x

…..and cake.  Because you should always eat cake on your birthday! This was made by one of my very thoughtful besties. It’s a #sugarfree #glutenfree #vegan carob cake topped with coconut kefir yoghurt & mixed berries. SO GOOD! She’s promised to give me the recipe so I can share it with you guys 😊

Enjoying my fave superfoods salad today to mark another year on Mother Earth. It’s filled with the most nutrient dense greens (watercress, chickory, baby spinach, rocket) & covered in my special almond pesto which I’ll post tonight on the blog. I’ve added some vitamin c rich cumquats & strawberries to increase the iron absorption & add extra flavour 😋
