Had to be done: cucumber noodles with bean sprouts, baby spinach & fresh coriander (cilantro) with a low sodium satay sauce. This was eaten after the raw carrot sauerkraut and the green leaf salad with a walnut mayo. For the satay sauce: mix 1 tbs of raw tahini with 3 tsp of coconut aminos, fresh grated ginger & 2 drops of liquid stevia. Mix together until super smooth and toss through the veggies.
